6 Eier, 330 g Zucker, 1 Päckchen Vanillinzucker, 100 g Mehl, 100 g gemahlene Haselnüsse, 40 g Speisestärke, 1 Päckchen Backpulver, 200 g Schlagsahne, 500 g Mascarpone, 500 g Magerquark, 50 ml Espresso, 120 ml Mandellikör, 3-4 EL Kakaopulver. Fett und Mehl für das Backblech
Zubereitung
1. Eier trennen. Eiweiß und 6 EL kaltes Wasser steif schlagen. 180 g Zucker und Vanillin-Zucker einrieseln lassen. Eigelbe nacheinander unterschlagen. Mehl, Nüsse, Stärke und Backpulver gut mischen und unter die Eischaummasse heben. Backblech (34 x 41 cm) fetten und mit Mehl ausstreuen. Biskuitmasse einfüllen, glatt streichen. Im vorgeheizten Backofen (E-Herd: 175 °C/ Umluft: 150 °C/ Gas: Stufe 2) ca. 20 Minuten backen, herausnehmen und auskühlen lassen.
2. Für die Creme Sahne halbsteif schlagen. Mascarpone, Magerquark, 150 g Zucker und Espresso mit den Schneebesen des Handrührgerätes kräftig verrühren. Sahne unterheben. Boden mit Mandellikör beträufeln. Creme auf den Biskuit geben und glatt streichen. Kuchen ca. 2 Stunden kühl stellen. Kurz vorm Servieren mit Kakao bestäuben und in Stücke schneiden. |
