if you wanna bake a roll like in germany,
you can take 2% of fat. It's 2kg by 100 kg flavour.
You need a tight and cool dough.
You must start the backing by 250°C and the temperature must falling down to round 220 - 210°C You must bake in a time of round 22 minutes.
